Fish Marinade

  • Barramundi fish fillet 4.0 pc
  • Salt To Taste
  • Black Pepper, Coarse To Taste

Harrisa Spice Mix

  • Turmeric Powder 5.0 g
  • Cumin Powder 5.0 g
  • Coriander Seed Powder 5.0 g
  • Garlic, Puree 10.0 g
  • Green chilli, large 3.0 pc
  • Cooking Oil 40.0 ml
  • Red bell peppers, peeled, seeded and roasted 2.0 pc

Preparation

  1. Fish Marinade

    • Portion and season fish fillet.
    • Set aside.
  2. Harrisa Spice Mix

    • Blend Harrisa Spice Mix into paste.
    • Set aside. 
  3. Tomato Sauce

    • Saute garlic and green chilli till fragrant.
    • Add Harrisa Spice Mix, smoked paprika, cumin powder.
    • Add in Knorr Tomato Pronto and water. Bring to boil.
    • Add in Chicken Stock Powder.
  4. Final Plating

    • Add marinated fish into the simmering sauce.
    • Cook till desired doneness.
    • Garnish with fresh coriander leaves.
