- Shape into small potato balls
- Dredge with breadcrumbs and fry until golden
Cranberry Demi Glace
10 mins
- Mix demi glace and water until dissolved. Bring to a boil
- Add cooking cream and cranberry jam and stir well
Assembly

- Serve a platter of croquettes together with a side of cranberry demi glace sauce
- Garnish with parsley flakes
