Base Sauce

Hollandaise Sauce

  • Egg Yolk 50.0 g
  • Unsalted Butter 100.0 g
  • Salt 2.0 g
  • Knorr Golden Salted Egg Powder 800G 10.0 g
  • Curry Leaves, deep fried 10.0 g
  • Lemon Juice 20.0 g

Macaroni

  • Macaroni, pre-cooked 130.0 g

Mac N' Cheese Patty

  • Fresh Lettuce 2.0 pc
  • Red Tomato, sliced 3.0 pc
  • Charcoal Brioche Bun 1.0 pc

Deep fried mac & cheese patty drizzle with salted egg mayo on artisan brioche bun.

Preparation

  1. Base Sauce

  2. Hollandaise Sauce

    • Double boil and slowly whisk egg yolk.
    • Slowly drizzle in melted clarified butter and whisk till rich and creamy. Add in curry leaves.
    • Lastly fold in Lady's Choice Real Mayonnaise.
    • Set aside.
  3. Macaroni

  4. Mac N' Cheese Patty

    • Mix Macaroni and Salted Egg Base Sauce thoroughly.
    • Shape/Mold to desired shape and leave in chiller overnight to set.
    • Coat chilled patty in seasoned flour, followed by egg wash and lastly breadcrumbs.
    • Deep fry till golden brown.
    • Set aside.
  5. Final Plating

    • Butter and grill brioche bun till crispy.
    • Layer with Hollandaise Mayo, followed by lettuce and tomato.
    • Lastly, place macaroni and cheese patty before covering the top with the other halve.
