Preparation

  1. Marinade

    • Chop chicken in to two pieces
    • Marinate chicken with KCP and other ingredients
    • Dredge with flour and fry. Set Aside
  2. Sambal Sauce

    • Stir fry onion, garlic, dry chili and lemongrass until fully cooked and oil separates
    • Add KN Ikan Bilis Stock and Gula Melaka. Set Aside
  3. Mango Kerabu

    • Mix all ingredients together in a bowl. Set Aside
  4. Assembly

    • Layer with Fried Chicken Chop at base
    • Spread sambal on the chicken and top with mango kerabu and fried onions
    • Repeat for 2 more layers.
    • Insert a stick for stability while plating.
    • Plate and serve with fries
